three’s a company

Tonight, our neighbor came over for dinner, and knowing he is a vegetarian, I wanted to make sure I cooked something substantial for the dinner. Naturally I turned to Chloe Coscarelli. 

I ended up choosing the Harvest-Stuffed Portobella Mushrooms (the stuffing included brown rice, cashews, and caramelized onions) with a side of Maple-roasted Brussels sprouts, ciabatta baguette crostinis and a light spring mix salad with goat cheese.

R brought over iced tea lemonade, absolutely delicious cumin flavored potatoes and some fruit. I have to say, everything turned out delicious.

Dinner party conversation covered Indian history, Hinduism, Haryana state and the J-1 visas. I am really glad to have such friendly and open neighbors like R. I hope we’re this lucky wherever we end up next!

    i think this is the best food item i’ve seen on your blog!
    LOVE cashews on savories, makes it act like vegan cheese

    and that tower of mushrooms is delightfully absurd
